Homemade apple & parsnip soup. Simple, delicious, 100% vegan. :)
From an old recipe book of my mother’s…Peel & chop 500g parsnips. Melt 60g dairy-free butter in a saucepan, stir in 1 tbsp mustard powder, then add the parsnip and coat evenly. Cover and cook whilst you core & chop 3 cooking apples. Add in the apple chunks with 1l water, cover, boil for 1 minute then simmer for 5-10 mins until the apple goes mushy. Transfer to a blender, add 1 tbsp soy sauce, BLEND!, then return to heat and stir in 1 tsp fennel seeds. :) Serve warm with crusty brown bread. Bon appetit!
